Well, the reasoning is quite simple: Salt & Pepper are a pretty basic flavour, and if you want to know how a places wings are, they pretty much ALL have s/p so they're a good comparison platform.
If a place can do salt & pepper right, then I'll probably order something else the next time we go there (for example at Bo's I'll sometimes get the roasted red pepper, and occasionally buffalo, though rare). Some places (ie Canadian brewhouse) I've tried other flavours and not really cared for them, but the salt/pepper is still good so I'll go for that (though their roasted red isn't bad either... it's slightly meh compared to Bo's though). It's worth noting btw the brewhouse Dill pickle were very Meh, but the ones at Sport Central were pretty good based on the one of yours I tried.
I also prefer dry wing flavours over sauces - things like honey/garlic, teriyaki, etc taste fine and all, but they're messy and kind of annoying to eat - this also partially limits the available flavours.

There are many ways to make chicken; some good, some less than good, few very good. Find the very good, stick to that - then you always have great chicken!

You're not thinking of this as a two stage problem.
First - sample wings that are interesting or known good. Rate selections.
Second - pick from top selections.

There is no fear in trying something new, just little need to. Again, why screw around with inferior chicken? And if you find an awesome one in your samples, eat it till you want something else! :P

Mix among high quality samples, if you have 4 preferred flavors and you eat 2 plates at wing night you can go six weeks without having the same two plates. Wing night every other week means every three months you're likely to eat the same thing. Since you go to different places constantly it's not like you're even getting the same thing in those months anyway - they all do it a little differently.

It's odd that guys who will typically order from only one to three beers (same everywhere) think preferring only three or four types of wings is boring. There is significantly more variety in four plates of wings than there is in three types of beer, and you're not screwing around with inferior chicken.
